I first made this smoothie on St. Patrick’s Day and dubbed it my Shamrock Shake. Since then, this tangy, salty drink has become part of the regular rotation, especially when I’m too hot to eat. The cucumber, ginger and cilantro along with the tang from kefir make it taste so refreshing. It’s also a great smoothie option for when you’re feeling salty, not sweet.
- 1 cup kefir
- 1 small cucumber (about 3 ounces), peeled only if the skin is tough
- 1 inch fresh ginger (no need to peel if you have a powerful blender)
- 1 handful cilantro leaves and tender stems
- Pinch of salt
- 4 ice cubes
- In a blender, combine all of the ingredients and puree until smooth. Pour into a glass and drink!
